Arugala Salad with Chicken and Fruit

ARUGULA SALAD WITH CHICKEN AND FRUIT

Makes 1 serving (1 protein, 1 vegetable, 1 fruit)

Ingredients:

100 grams chicken breast

2 or more cups of arugula greens

Your choice of apple, orange, strawberry or grapefruit slices

Dressing made from your choice (see dressings)

1 tablespoon red onion, chopped

Salt and pepper to taste

Directions:

Cook chicken with a little lemon juice and water until slightly browned. Prepare and wash arugula. Lay chicken slices on top of arugula salad and top with fruit and dressing.



COOKING TIPS

#1 

Tongs can be used to juice a lemon. Just place the lemon in between and press. Voila!

To remove the smell of garlic from your hands rub them on stainless steel.

To prevent water from boiling over rest a wooden spoon across the pot of boiling water
