Carmamelized Onion Garnish


CARMAMELIZED ONION GARNISH

Makes 10 servings

Ingredients:

3 medium – large yellow onions, sliced very thin

1 teaspoon dried thyme

1 bay leaf

Chicken broth

Water

Salt and pepper to taste

Directions:

Heat a large non-stick skillet on high. Place onions in, sprinkle with salt and do not stir for 5 minutes. Note: if the pan starts to smoke, turn the temperature down to medium. After 5 minutes stir the onion making sure to move the onions that are starting to brown on the bottom to the top. Also make sure to scrape the brown bits on the bottom and sides of the pan. Let stand another 5 minutes and repeat. And repeat one more time (15 minutes). After the 3rd stir add the thyme, bay leaf and pepper. Then add ¼ cup chicken broth and scrape up the brown bits. Let stand another 5 minutes and repeat process, stirring only every 5 minutes and only now with water 2-3 more times. After 30-40 minutes your onions will be cooked and caramelized to perfection! Transfer to a storage container.


COOKING TIPS

Tongs can be used to juice a lemon. Just place the lemon in between and press. Voila!

To remove the smell of garlic from your hands rub them on stainless steel.

To prevent water from boiling over rest a wooden spoon across the pot of boiling water
