Spice it up! Indian Spiced Spinach


INDIAN SPICED SPINACH

Makes 1-2 servings (1 vegetable)

Ingredients:

Spinach

2 tablespoons onion, minced

¼ cup chicken broth

1/8 teaspoon cumin

1/8 teaspoon paprika

1/8 teaspoon turmeric

Pinch of fresh grated ginger

Pinch of fresh grated garlic

Pinch of coriander

Salt and pepper to taste

Directions:

Saute spices in chicken broth with onion. Add spinach and stir gently until cooked. (Substitute ¼ teaspoon garam masala for dry spices).

Variation: Add chicken or shrimp


COOKING TIPS

#1 

Tongs can be used to juice a lemon. Just place the lemon in between and press. Voila!

#2 

To remove the smell of garlic from your hands rub them on stainless steel.

To prevent water from boiling over rest a wooden spoon across the pot of boiling water
