Mexican Style Cilantro Chicken


MEXICAN STYLE CILANTRO CHICKEN

Makes 1 serving (1 protein, 1 vegetable)

Ingredients:

100 grams cubed or sliced chicken

Chopped tomatoes

½ cup chicken broth

2 tablespoons lemon juice

1 tablespoon chopped onion

½ teaspoon oregano

¼ teaspoon crushed garlic

¼ teaspoon chilli powder

Cayenne pepper to taste

Pinch of cumin

Fresh chopped cilantro

Salt and pepper to taste

Directions:

Lightly brown the chicken with a little lemon juice. Add spices, additional lemon juice and chicken broth. When the chicken is fully cooked, add fresh tomatoes and cilantro and cook for 5 – 10 minutes more.


COOKING TIPS

#1 

Tongs can be used to juice a lemon. Just place the lemon in between and press. Voila!

To remove the smell of garlic from your hands rub them on stainless steel.

To prevent water from boiling over rest a wooden spoon across the pot of boiling water
