Italian Beef Roll Ups


Makes 1 serving (1 protein, 1 vegetable)


100 grams lean flank steak

200 grams finely chopped cabbage

1 cup beef broth

2 tablespoons apple cider vinegar

2 tablespoons Bragg’s all-purpose seasoning

1 clove garlic, crushed

1 teaspoon Italian seasoning

Salt and pepper to taste


Tenderize the steak with manual meat tenderizer until flat and thin. In a frying pan, combine cabbage with spices, vinegar and all-purpose seasoning and cook until slightly tender.

Spoon cabbage mixture into pounded flank steak and wrap into a roll. Fill the bottom of the pan with water and beef broth. Salt and spice the top of the roll. Bake in 375 degree oven for approximately 20 minutes until cooked and cabbage is tender. Baste occasionally with juices to keep the roll moist.

Variations: Substitute spinach for the cabbage filling.

Tongs can be used to juice a lemon. Just place the lemon in between and press. Voila!


To remove the smell of garlic from your hands rub them on stainless steel.


To prevent water from boiling over rest a wooden spoon across the pot of boiling water
